Rabbits
I have researched animals for prepping and found rabbits to be a prime choice
Other good options (i'd consider on top of and after rabbits) would be (scobie) ducks and small sheep. Rabbits actually don't eat that much grass as i'd thought and prefer leafy food, but both ducks and sheep will take to the grass.
Also, i was surprised when viewing [youtube and such] vids showing how to butcher rabbits; it's quick, clean, humane, and easy. Good to have watched, if even once.

big rabbits
Advantage of big rabbits:
- they can't jump and escape as well
- they feed a bunch of people
- they can fend off small predators

rex
The rex rabbits have a fur mutation that's very nice. They are the most popular breed for fur breeding (along with the chinchilla breed).
A medium sized rabbit that's pretty hardy.

angora
- eat little
- sit still for hours at a time
- provide excellent wool 4 x / year
- fairly large
These are good animals for a survival situation. They can stand cold temperatures well, don't eat much, and don't move much. After TSHTF they provide wool (and meat of course).
