Toxic compounds from fried foods cause cancer and deteriorate brain health
Researchers from the University of the Basque in Spain publishing in the journal Food Chemistry are the first to discover compounds released from common cooking oils that significantly increase the risk of neurologic degenerative diseases and a variety of different cancers.
Breakdown chemical structures known as aldehydes are formed in cooked vegetable oils such as sunflower oil when heated to normal frying temperatures,and are also released into the air where they can be inhaled.
Researchers found that the sunflower and flaxseed oils degraded significantly and are the ones that create the most toxic aldehydes in the least amount of frying time.

Study finds link between toxic aldehydes in reheated oil and neurodegenerative diseases, cancer
you could be exposing yourself to high levels of toxic aldehydes, chemicals known to cause neurodegenerative disease and cancer. Researchers from the University of the Basque Country (UBC) in Spain have found that some popular cooking oils, including soybean and sunflower oils, generate high levels of toxic aldehydes when heated and reheated.
Using gas chromatography / mass spectrometry analysis protocols, they discovered that sunflower oil was the worst offender for toxic aldehydes, followed by flaxseed oil, also known as linseed oil, and olive oil. And the more times these oils were reheated, the worse their concentrations of toxic aldehydes became.

Trans Fats Linked With Aggression, Study Finds
For the study, Golomb and colleagues examined the dietary information of 945 men and women, and also conducted behavioral assessments on them. The behavioral survey included their life histories of aggression, how they handled conflict, their self-rated impatience and irritability levels, and their score on an "overt aggression" scale.
Researchers found that greater trans fats intake seemed to predict whether a person was more aggressive. The finding held true even after taking into account factors like sex, age and ethnicity.
